Cut up the rabbit fillet into 1 inch pieces.
Add marinade ingredients together and marinade rabbit meat pieces for 20 minutes
Mix the sweet and sour sauce ingredients well together and set aside.
Whisk all the frying batter ingredients together until you have a smooth thick batter.
Transfer your rabbit pieces into the batter and make sure they are well coated.
In a saucepan, add enough cooking oil for deep frying. Once the oil is hot, deep fry the rabbit pieces until they turn golden brown, then place them on a paper towel to absorb excess oil.
Heat up a separate pan and add in some cooking oil. Stir fry the peppers and spring onion pieces until you smell the peppery aroma from the peppers, then add chopped garlic.
Add the sweet and sour sauce. As soon as the sauce thicken, add fried rabbit pieces and stir well to coat them in the sauce.
Serve with sticky rice and garnish with sesame seeds and finely chopped spring onions.
