Curry and Lime Rabbit Sosaties

Fresh garlic, lime and spicy curry powder delicately infused with some rabbit fillet chunks.  Served with mint yogurt on a bed of couscous or rice.

Kebabs and Marinade
 8 rabbit fillets
 2 limes
 2 tbsp olive oil
 1 tbsp curry powder
 1 tsp smoked paprika
 1 tsp kosher salt
 ¼ tsp freshly ground black pepper
Mint Yogurt & Garnish
 2 cups Greek yogurt
 20 mint leaves
 1 tsp kosher salt
 1 tsp frehsly ground black pepper
 2 limes

Preperation

Soak the bamboo skewers in water for 30 minutes.

Juice the two limes and mince the garlic cloves. Add the lime juice and minced garlic to the large bowl.

Finely chop the mint leaves and add to the smaller bowl.

Cut the rabbit fillet into equal size cubes so they can cook evenly. You can decide if you want to make a mini sosatie with smaller pieces or thicker cuts for a man-size sosatie.

Marinade the Sosaties

In the large bowl with the garlic and lime juice, add olive oil, curry powder, smoked paprika, salt, and black pepper. Mix together with a large spoon.

Add the rabbit meat pieces and coat evenly.

Cover with plastic wrap and let marinate for over 1 hour to overnight in the refrigerator.

Make the Mint Yogurt

In a small bowl, add the Greek yogurt, chopped mint, salt, and black pepper. Stir with a fork or spoon, and set aside.

Prepare your rice or couscous at the same time and set aside.

Grill the Sosaties

Heat a grill (fire) or an indoor grill pan to medium-high.

Thread rabbit pieces onto the wet wooden skewers. Try to add 5 to 6 pieces per skewer. Discard the leftover marinade.

Grill or Flamegrill the sosaties on the grill. Mini sosaties can go as quick as 2 minutes per side and man-size sosaties can take up to 4 mintues per size.

DO NOT OVERCOOK Test by tasting the sosaties to your liking.

Serve

Serve on a bed of rice or couscous, Garnish with lime wedges, mint or cilantro. Serve the mint yogurt as a dipping sauce in a side bowl with every serving.
