Perfectly Cooked Rabbit Fillet

Ingredients
 4 rabbit fillets
 ¼ olive oil
 4 large garlic cloves, finely chopped
 1 tsp dried oregano
 1 tsp salt
 ½ tsp freshly ground black pepper
 1 ½ tsp lemon zest
 juice of half a lemon

Directions

Combine all the ingredients and mix well.

Use a zip lock bag or a small glass or ceramic bowl and combine fillets and the seasoning.

Marinade in the refrigerator for 2 to 3 hours so the infused flavored olive oil can penetrate the meat.

Cooking Method

Quickly grill over high heat.

Sear both sides either quickly over high heat. Fold each end of the fillet to one point to create a nice thick cutlet. Then decide which side will be top and slice the meat halfway though across the whole length.

No need to baste, season to taste just before the meat is ready. Flame Grilled over high heat for 2 1/2 minutes per side will produce best results. Can be grilled over medium heat to taste.
